Makes 8 servings
Cranberry Simple Syrup:
½ c. unsweetened cranberry juice
½ c. sugar
Cranberry Bellinis:
2 c. unsweetened cranberry juice, chilled
1 750 ml bottle of prosecco, sparkling wine or sparkling water
Frozen cranberries and fresh lime slices, for garnish
Combine the cranberry juice and simple syrup in a small saucepan, and simmer over medium-low heat until all the sugar dissolves, set aside to cool.
In champagne flutes, pour 2 t. cranberry simple syrup in the bottom of the glass. Top with 2 oz. cranberry juice, then 4 oz. prosecco, sparkling wine or sparkling water. Garnish with frozen cranberries and a lime slice.
